Known in China as Xin Gong Yi Bai Cha, literally “white tea processed with a new technology”, named after the new cultivar of the same name developed in Fu Ding in 1968. Processing is different from conventional white teas by adding a step of fine leaf rolling. As a result, the leaves break more and have time to oxidize more before they are dried.
